Late-summer tomatoes at their absolute peak, simmered down with good olive oil, oregano, and a little garlic until they taste more like themselves than they did raw. Gluten-free orzo goes in at the end so every spoonful has some substance to it. Bright, unfussy, and the clearest argument we can make for eating tomatoes in August and basically never otherwise.
