Gina opens with a hand-pressed beet tortilla layered with slow-pulled wagyu beef from LBE Wagyu — raised by Brandon and Emilee Lambson right here in Idaho, with the kind of care that is impossible to fake. Rich, earthy, and deeply satisfying in a single bite.

Then: locally foraged fungi from Ferg’s Fabulous Fungi meet crispy popcorn cauliflower in a vegetarian bite that is earthy, textural, and quietly brilliant. This one surprises people. It always does.
